In a bowl, combine the ingredients for the dough and knead together. Refrigerate for 60 minutes.
For the filling, peel and slice the apples into small pieces. Mix together the apple pieces, raisins, brown sugar and cinnamon. Steam in a large pot. Allow the filling to cool.
Preheat oven to 175°C. Line two baking sheets with parchment paper.
On a lightly floured surface, roll out the dough and slice into ca. 8cm large squares, Place the filling in the middle of the squares. Fold the squares over to form triangles. Make sure you do not over fill the rectangles, so that the filling does not pour out from the edges. Press the edges firmly together. Place the apple turnovers on the prepared baking sheets, leaving a gap between each one. Bake for 20 minutes, or until the apple turnovers have turned a light brown colour. Remove the turnovers from the baking sheet and allow to cool on a wire rack.
