- 1 ripe avocado
- 100 g Sweet Nature Cane Sugar
- 1 egg
- 1 pck. vanilla sugar
- 50 g cocoa powder
- 60 g Küchenmeister Whole-Grain Spelt Flour
- 1 tsp. baking powder
- Pinch of salt
- 75 g dark chocolate pieces
Preheat the oven (electric 175°C / circulated air 155°C). Line a baking sheet with parchment paper.
Mix together the flour, cocoa, baking powder and salt.
Cut the avocado in half and remove the stone. Remove the fruit flesh from the skin, and using an immersion blender purée until smooth. Add the avocado, sugar, egg and vanilla sugar to a bowl and mix together. Now add the dry ingredients and mix until well combined. Fold in the chocolate chips.
Using a spoon, drop the dough onto the prepared baking sheet. Bake the trays one after another for ca. 8-10 minutes. Remove the cookies from the oven, allow to cool briefly on the baking sheets, before transferring to a wire rack to cool completely.
