Preheat oven to (electric 220 °C/ convection 200 °C). Line a baking sheet with parchment paper.
In a large bowl, combine the flours, sugar, vanilla sugar, cinnamon, cardamom and baking powder. Cut in the butter. Slice the apple into small pieces and add to the mixture. Gradually add the milk and mix to form a soft dough.
On a lightly floured surface gently knead the dough. Separate the dough into two equal parts. Form both parts into two balls. Using your hands gently flatten the dough into two round forms, so that the dough is ca. 1 cm thick. Brush with milk and sprinkle with sugar and cinnamon. Place both circles onto the prepared baking sheet, and slice each circle into 6 pieces.
Bake for 15 minutes in the preheated, until the scones have risen and are golden brown.
Serving suggestion: when the scones are still warm spread with butter.
