Biscuits:
- 200 g Küchenmeister Wheat Flour T405
- 1.5 P vanilla pudding powder
- 1 tsp. baking powder
- 75 g sugar
- 125 g butter
- 1 egg
- 1 tbsp. milk
Filling:
- 75 g soft butter
- 125 g powdered sugar
- 2-3 tbsp. vanilla pudding powder
For the biscuits: Begin by cutting the butter into small pieces. Place the flour, pudding powder, baking powder, sugar, and butter in a bowl. Using your hands work the mixture together so that it resembles large crumbs. Add the egg and the milk, start kneading the dough with the dough hooks of an electric mixer until it starts to come together. Finish kneading the dough with your hands until it is smooth and fully combined. Form the dough into a ball, wrap it in cling film and refrigerate for ca. 30 minutes.
Preheat the oven (electric 180°C / circulated air 160°C) and line two baking sheets with parchment paper. Lightly flour a work surface and roll the dough out to approx. 3mm thick. Slice the dough into an even number of squares (ca. 3x3cm) and place on the baking sheets. Bake the baking sheets one after another for ca. 13-15 minutes, or until the biscuits have started to turn golden brown.
Remove the biscuits from the oven and allow to cool for ca. 5 minutes on the baking sheets, before transferring to a wire rack to cool completely.
To make the filling: Start by creaming the the butter. Sieve together the powdered sugar and pudding powder, and slowly add it to the butter. If the filling appears to be too hard, carefully add a little bit of milk. The consistency should be thick but spreadable.
Spread the filling onto the underside of half of the biscuits and place a second biscuit on top. Now make yourself a cup of tea, relax and enjoy your delicious baked treats!
