Dissolve the yeast and sugar into the warm water. Mix together the spelt flour, butter, salt and olive oil. Pour the yeasted water on top. Vigourously knead the dough until a smooth springy dough forms. Then cover the dough and leave it to rise in a warm place for 30 minutes, or until it has doubled in size.
Grease a loaf pan (ca. 30cm long). Briefly knead the dough before rolling it out, on a lightly floured work surface, to 1cm thickness. Brush the dough with the melted butter. Evenly distribute the chilli powder, coriander and cheese on top.
Slice the dough into 8x8cm big squares. Stack 5-6 squares on top of each other and place in the loaf pan. Repeat until all the squares have been used and the loaf pan is full. Leave to rise for 1 hour.
Bake the pull apart loaf in a preheated oven (conventional 175°C /fan 150°C) for 30-40 minutes. Remove from the oven and leave the loaf in the pan for 30 minutes. Carefully remove the loaf from the pan, cool briefly and enjoy
