- 200 g Küchenmeister Spelt Flour T1050
- 60 g butter
- 2 eggs
- 150 g yoghurt
- 180 g grated Gouda
- 160 g cooked ham
- 2 onions
- 1 bunch spring onions
- 1 pck. baking powder
- 1/2 garlic clove, chopped
- 1/2 tsp. salt, pepper, paprika
Cube the onions and ham. Chop the washed spring onions into small pieces. Combine the flour with the baking powder, salt, pepper, paprika, chopped garlic and 140 g of the grated cheese. Mix in the ham, onions and spring onions. Melt the butter in a small pot. Beat the eggs using an electric mixer, before adding in the yoghurt and the melted butter. Stir the flour mixture into the egg mixture.
Line a muffin tray with muffin cups and divide the muffin batter between the cups. Sprinkle with the remaining cheese. Back the muffins in a preheated oven (175°C) for ca. 30 minutes or until golden brown.
These muffins taste great still warm from the oven, but are also delicious cold.
