- 360 g pitted dates
- 90 g rolled oats
- 2 tbsp. Küchenmeister Wheat Bran
- 30 g shredded coconut
- 2 tbsp. chia seeds
- Zest from 1 lemon
- 2 tbsp. fresh lemon juice
- 35 g chopped dried blueberries
- 2-3 tbsp. shredded coconut for rolling
Place all ingredients into a food processor and blend until fairly smooth. Refrigerate the dough for ca. 15 minutes. With wet hands roll the dough into balls and place on a parchment lined baking sheet. Place 2-3 tablespoons of shredded coconut into a bowl. Roll each ball in the coconut, using your hands to press the coconut into the surface. Refrigerate for ca. 30 minutes or until ready to enjoy!
Tip: Try swapping Küchenmeister Wheat Germ for Küchenmeister Wheat or Oat Bran! All three are delicious ingredients to add a boost of fibre and energy to these healthy treats!
