cherry cheesecake

Preheat oven (electric 200°C/convection 180°C). Grease and lightly flour a spring form pan (26cm in diameter).

Knead together flour, baking powder, sugar and butter. Using your hands, combine to make a streusel. Press 3/4 of the streusel into the prepared pan, forming an edge and bottom. In a sieve, drain excess liquid from the cherries.

For the filling: Cream together the butter and sugar. Add the eggs, one at a time, mixing with each addition. Mix in the quark, pudding powder, and lemon juice. Now fold in the cherries.

Pour the quark mixture into the spring form and sprinkle the rest of the streusel on top. Bake for 50 minutes in the preheated oven. Remove the cake from the oven. Carefully remove the cheesecake from the spring form and allow to cool. When desired sprinkle with powdered sugar and move onto a cake plate.
