Ingredients:(for 18-24 cookies)
- 115 g soft butter
- 150 g sugar
- 2 tbsp. honey
- 2 eggs
- 1 pck. vanilla sugar
- 250 g Küchenmeister wheat flour T405
- 40 g Küchenmeister wheat bran
- 1/2 tsp. salt
- 100 g rolled oats
- 120 g dried cranberries
- 90 g shredded coconut
Preheat oven to 180 °C. Line two baking sheets with parchment paper.
Cream the butter, sugar and honey together. Add the eggs one at a time. Combine flour, wheat bran, salt and rolled oats, and mix with the sugar-butter mixture. At the end fold in the cranberries and coconut. Form approx. 25 balls from the dough and place on the baking sheets leaving roughly a 4cm gap between each cookie. Using a fork slightly flatten the cookies and bake for 10-12 minutes.
