Ingredients:
- 1 L Milk
- 250 g Sweet Nature brown cane sugar
- 1 vanilla pod
- 1/8 tsp. salt
- 1/2 tsp baking soda
Place the milk, cane sugar, salt and baking soda into a medium sized pot. Slice the vanilla pod lengthwise and scratch the seeds into the pot. While stirring constantly bring the pot to a boil, making sure that the milk does not boil over the sides of the pot. Reduce the heat and continue cooking the mixture for 40-60 minutes, stirring the pot every 10-15 minutes. Make sure the milk is kept at a rolling boil the entire cooking process. As you cook the milk its colour will darken and the mixture will thicken. The longer you cook the dulce de leche the thicker and darker the caramel will become.
When the dulce de leche has reached your desired thickness and colour, remove from the heat and allow to cool, before transferring it to clean canning jars.
