Cut the butter into small pieces. In a mixing bowl, combine together the flour, sugars, salt, almonds, 1 egg und butter pieces, and first with an electric mixer then with your hands, mix until a smooth dough forms. Form a ball, wrap in cling film and refrigerate for 30 minutes.
Preheat the oven (electric 200°C/convection 175°C). Line two baking sheets with parchment paper.
Separate the eggs and store the egg whites in the fridge. Whisk the egg yolks with 2 tbsp. of water. On a lightly floured surface, roll the dough out to ca. 1cm thick. From the dough cut out circles with a diameter of ca. 8cm, and place on the baking sheet. Brush the circles with the egg yolks. Bake in the preheated oven for 12-15 minutes. Allow to cool completely.
For the snowmen heads, using the writable icing or icing pens draw faces onto the marshmallows.
Mix together the powdered sugar, egg whites and lemon juice. Thickly spread the icing onto the baked cookies. Place a marshmallow on the edge of each cookie. Place candy pearls on the icing to look like buttons. For arms place the chocolate sticks into the icing. Allow the melting snowmen to fully dry.
