Ingredients:
- 85 g quinoa
- 60 g +2 tbsp. olive oil
- 1 shallot
- 280 g spinach
- Salt
- Pepper
- 255 ml milk
- 150 g Küchenmeister Spelt Semolina
- 25 g fresh grated parmesan
- 1 egg
- 135 g bread crumbs
- 3 egg whites
In a pot, bring the Quinoa with 235 ml water to a boil. Cover the pot, reduce the temperature and allow the quinoa to simmer for ca. 15 minutes, or until all the water is absorbed. Remov the pot from the stove and using a fork fluff the quinoa. Cover the quinoa and leave it to swell.
In the meantime heat 1 tablespoon of oil in a pan. Peel and chop the shallot into small pieces. Add the shallot to the pan and cook until soft for ca. 1 minute. Wash and shake the spinach dry before adding it to the pan. Continue cooking the spinach and shallots until most of the liquid is absorbed. Season the spinach with salt and pepper. Place the spinach in a sieve, and squeeze out the rest of the extra liquid. Now chop the spinach.
In a pot, bring the milk, 350 ml water, 1 tbsp. olive oil and 2 teaspoons of salt to a boil. Remove the pot from the stove, and gradually stir in the spelt semolina. Cook the semolina at a medium temperature, stirring occasionally for ca. 7 minutes. Remove the cooked semolina from the stove and stir in the quinoa and parmesan. Season the semolina mixture with salt and pepper and allow cooling for 15 minutes.
Beat the egg, and together with the spinach mix it into the semolina mixture. Spread the semolina into a lined baking pan. Leave the semolina to cool at room temperature, before covering with plastic wrap and refrigerating for at least 4 hours.
Slice the chilled semolina into ca. 12 squares. Pour the breadcrumbs into a bowl. Beat the egg whites with 1/4 tsp. of salt and 1 tsp. of water. First dip the patties into the egg whites, allow excess liquid to drain off, before tossing the patties in the breadcrumbs. Heat some oil in a pan. Fry half of the patties in the pan, flipping them to make sure every side becomes golden brown. Place the fried patties onto a piece of paper towel to drain off excess fat. Continue cooking the rest of the patties in the same way.
Serve these healthy patties with a fresh salad, alternatively wrap them in a tortilla, or simply dip them in your favourite sauces!
