Spelt Summer Salad

In a bowl, whisk together all of the ingredients for the vinaigrette and set to the side. Cook the soft spelt grains according to the package instructions. Leave to cool for 10 minutes. Slice the avocado in half and remove the stone. Remove the skin and slice the avocado into cubes. Wash, dry and slice the strawberries. Place the soft spelt grains, avocado, strawberries, corn, pine nuts and coriander into a bowl. Drizzle with the lime vinaigrette and stir until the salad is evenly coated.
