Preparation (for 1 crumble cake):
Preheat the oven (electric 200°C / convection 175°C). Grease a spring form (26cm Ø) and dust it with flour.
Place the flour, sugar, salt and egg yolk in a bowl. Add the butter (cut into pieces) and using the dough hooks of an electric mixer, knead the ingredients together. Now using your hands continue to knead the dough and work it until it resembles crumbles.
Place 2/3 of the dough into the prepared spring form, press it flat and create a small edge. Now bake the base for 10 minutes, before removing it from the oven. Fill the pan according to your preferred recipe. Sprinkle the remaining streusel dough on top and bake the cake by the same temperature for ca. 40 minutes (unless otherwise stated by your recipe).
Tip: For an especially crunchy crumble, place the dough in the refrigerator until you are ready to use it. You can also refine and make your streusel/crumble even more delicious by adding vanilla sugar, cinnamon, cocoa powder and/or chopped nuts.
