In a large bowl, mix together the whole wheat flour, wheat bran, baking powder and cinnamon.
In a second large mixing bowl, whisk together the eggs, sugar, yoghurt and maple syrup. Mix the two bowls together. Stir in the milk. Leave the pancake batter to sit for 10 minutes.
Grease a frying pan with butter or oil and heat it over a medium heat. Using a small scoop, pour 3-4 small dollops of batter in the pan, and cook each side for approx. 2-3 minutes, or until golden brown. Keep the cooked pancakes warm.
Cut the fresh fruit into slices. Stack every 3-4 pancakes with fruit in between. Secure the pancake towers with toothpicks. To finish drizzle with maple syrup.
