Berry Cake

Defrost the berries and drain excess liquid. Preheat the oven (electric 200°C/convection 175°C). Grease a large baking pan and lightly dust with flour.

Cut the marzipan into small pieces. Cream together the marzipan pieces, vanilla sugar, sugar, butter (in pieces) and salt. Add the eggs one at time, mixing with each addition. Combine together the flour and baking powder. Add the flour mixture, alternating with the milk, to the wet ingredients. Mix well with each addition. Pour the batter onto the prepared pan and spread evenly. Evenly distribute the berries and bake the cake for 15-20 minutes.

In the meantime prepare the meringue. Stiffly whip the four egg whites and slowly add in 140 g sugar until. Remove the cake from the oven and spread the meringue on top. Bake at the same temperature for another 10-15 minutes. When the cake is baked, remove from the oven and allow to cool.
