Strawberry Peach Bellini

For the strawberry syrup: Wash, dry and cut the strawberries into small pieces. Place the water and brown sugar in a pot, and over medium heat stir until the sugar is dissolved. Add the strawberries and bring to a boil. Reduce the heat and allow to simmer for 10 minutes, or until the mixture is thicker and the strawberries are mushy. Remove from the stove, and press through a sieve. Place strawberry syrup in the fridge.

For the bellinis: Wash and dry the strawberries and peaches (remove the stone from the peaches), and slice into small chunks. In a large jug combine all the ingredients for the bellinis and stir well. Refrigerate the bellinis for 2-3 hours. Pour the bellinis in glasses over ice and enjoy! If you wish decorate with fresh mint.
