Alsatian tarte flambée

Wafer-thin, crispy and simply super delicious. Alsatian tarte flambée is homemade in no time. If you like, you can prepare it classically with bacon and red onions. But vegetarian versions also taste great. Perfect for cold and cozy winter evenings.

Ingredients and preparation

Ingredients for the dough (3 round tarte flambée):
250 g Küchenmeister spelt flour type 1050
125 ml water
1 pinch salt
1-2 tbsp oil
Ingredients for the topping:
1-2 red onions
100 g bacon cubes
200 g fresh cream
Salt, pepper, fresh parsley or chive rolls

Preparation: Mix all the dough ingredients together and knead until the dough is smooth and elastic. Let rest covered at room temperature for about 10 minutes. Divide the dough into thirds, knead each piece of dough again with your hands aned shape into a ball. Let rest, covered, at room temperature for another 45 minutes.

Preheat the oven to 250° C.

Roll out the dough on a lightly floured work surface into three paper-thin patties. Cut 1-2 onions into fine rings and 100 g pancetta into cubes or strips. Season 200 g crème fraîche with pepper and salt. Spread it on the patties and cover them with the sliced onions and bacon. Bake in a preheated oven at 250° C for 9-12 minutes and sprinkle with fresh parsley or chive rolls after baking.

Our tip: If you like it vegetarian, simply omit the bacon and supplement with finely chopped red peppers, leek rings or fresh goat cheese.
