Spelt Rice Bowl
With this delicious bowl you round off every summer day perfectly. With our spelt rice, as a great alternative to regular rice, it's easy to whip up a great bowl with healthy ingredients like eggs, avocados, carrots and peppers! Our perfect dinner for you.
Ingredients and preparation
Preparation of the bowl: Prepare the spelt rice according to package instructions. Hard boil 2-3 eggs, rinse with cold water, peel and cut in half.
Finely dice the carrot, 2 radishes, 2-3 tomatoes and half the bell bell pepper. Cut the avocado in half, peel and slice.
Put 1 can of chickpeas in a colander, rinse well and drain. Heat a little oil in a pan and fry the chickpeas in it until hot. Season with salt, pepper and paprika powder.
Preparation for the dressing: Mix all the ingredients together.
Put the finished spelt rice into two cereal or soup bowls. Arrange the diced vegetables, avocado, eggs and chickpeas nicely on top. Decorate with arugula and figs and pour the dressing over it.
