Spelt rice salad

Totally underestimated but insanely delicious: spelt rice in combination with fresh vegetables and delicious honey mustard dressing. This salad is great as a takeaway at parties or as a side dish at barbecues with friends - see for yourself!

Ingredients and preparation

Ingredients for the salad (2 servings):
1 bag Küchenmeister spelt rice
1/2 cucumber
3 - 4 cherry tomatoes
1/2 bell bell pepper
1 small can corn
Arugula to taste
Ingredients for the dressing:
120 ml yogurt
40 ml White Balsamic
40 ml olive oil
1 tsp honey
1 tsp mustard
Salt, pepper, chives

Preparation of the salad: Prepare the spelt rice according to package instructions and let it cool.

Cut the tomatoes in half, peel half the cucumber and dice with half the bell bell pepper. Drain the can of corn.

Preparation of the dressing: Mix the ingredients of the dressing together well.

Mix the spelt rice with the vegetables. Pour the dressing over it and enjoy.

Our tip: If you like the salad heartier, you can serve boiled eggs and diced bacon with it.
