Kaiser pancake

Who does not love it, the alpine cuisine! So also the Kaiserschmarrn belongs to one of the many delicious dishes. Prepared with spelt flour, as a fluffy dessert for dinner, the Kaiser pancake reminds you of beautiful winter vacations on the alpine pastures.

Ingredients and preparation

Ingredients (for 4 servings):
125 g Küchenmeister spelt flour type 630
4 eggs
250 ml milk
1 pinch salt
1 tsp baking powder
40 g sugar
80 g raisins, soaked in rum (optional)
4 tsp  butter
1 tsp  powdered sugar
3 tsp flaked almonds
some fruit (optional)

Preparation: Separate 4 eggs. Mix the egg yolks with 125 g spelt flour, 250 ml milk, a pinch of salt, 1 teaspoon baking powder and 40 g sugar to a smooth dough and let it rest for 10 minutes.Beat the egg whites until stiff and fold them carefully into the dough. Then add the raisins.

Put 2 tbsp butter in a frying pan and fry a crispy pancake at medium temperature. Divide the pancake into 4 pieces, flip and add the remaining butter. After baking, tear the pancake into pieces, sprinkle with powdered sugar and flaked almonds and - if you like - garnish with some fruit.
